Extra Virgin Olive Oil – Special Reserve
It is a bright green fruity oil reminiscent of fresh herbs and banana, with a pleasant bitter flavor and outstanding and persistent pungency. It is sweet and harmonic.
This is a Blend of two varieties: Arbequina and Coratina.
Physicochemical characteristics/properties
This oil has an acidity level under 0.5%. The Peroxide Index under 9.0 meq implies that the lifespam of this oil ranges between 18 and 24 months. The K232 is 1.90 and the K270 is 0.12. The Fatty Acid Profile is balanced, with 60.00% of Oleic Acid, 18.00% of Linoleic Acid and 1.00% of Linolenic Acid and a low Palmitoleic and Stearic Acid content. The Sterol Profile indicates lack of Cholesterol and a Campesterol value under 4.00%. The Refractive Index is of 1.4680 (25º C), the Saponification Index of 192.00 and the Iodine Index of 86.00.
